TAH – CHIN WITH SAFFRON

Iranian saffron is one of unique spices in the international markets. This spice has special smell and aroma and color so most of people use it as a fragrant and tasty flavor and color are used in various Iranian and foreign foods including saffron shrimp dish, saffron Tah – chin and etc.

Most of people love the recipes dishes made with saffron because they have special aroma and smell. Saffron Iranian dishes are delicious and unique and various.
I chose this one, “Iranian saffron Tah – Chin” because I remembered my mother had to make this dish and I absolutely love it! The flavors are elegant and delicious.

Ingredients

  • 8 cups of rice
  • 3 egg yolks
  • 2 cups of strained yolks
  • Required amounts of stewed saffron
  • Enough salt, oil, pepper

Directions

Drain the rice. Pour strained yogurt, egg yolks, stewed saffron, salt and pepper in a pan and stir. Add 3 to 4 cups of chained rice and mix “The mix is Tah – Chin”. Put the pan on the heat and pour the oil, then pour Tah – Chin in the pan and smooth it with a spatula. Add the remaining rice over it. A half cup of water and oil can be added. Then make some holes in the rice and put the lid. After steaming, lower the heat and wait until the rice is stewed.
